👩🍳 How to make Chikhalwali
- Dry roast sesame seeds at 170°C in oven for 5 minutes, stirring occasionally
- Seeds should turn slightly golden, release aroma
- Heat ghee to 160°C in heavy pan
- Add roasted sesame seeds, stir 2 minutes
- Make sugar syrup: boil water with sugar to 110°C (soft ball)
- Add hot syrup to sesame seeds slowly, stir well
- Add cardamom powder
- Cook 3 minutes on low heat (150°C), stirring constantly
- Pour onto greased tray lined with parchment
- Flatten to 1cm thickness with wet spatula
- Cool to room temperature (1.5 hours)
- Break into pieces
- Visual: golden-brown, crunchy brittle
- Store in airtight container (keeps 1 month)
