👩‍🍳 How to make Chikhalwali

  1. Dry roast sesame seeds at 170°C in oven for 5 minutes, stirring occasionally
  2. Seeds should turn slightly golden, release aroma
  3. Heat ghee to 160°C in heavy pan
  4. Add roasted sesame seeds, stir 2 minutes
  5. Make sugar syrup: boil water with sugar to 110°C (soft ball)
  6. Add hot syrup to sesame seeds slowly, stir well
  7. Add cardamom powder
  8. Cook 3 minutes on low heat (150°C), stirring constantly
  9. Pour onto greased tray lined with parchment
  10. Flatten to 1cm thickness with wet spatula
  11. Cool to room temperature (1.5 hours)
  12. Break into pieces
  13. Visual: golden-brown, crunchy brittle
  14. Store in airtight container (keeps 1 month)
