👩‍🍳 How to make Chicken Tikka Masala

  1. Tikka: Mix yogurt (150ml), ginger-garlic paste (30g), red chili powder (5g), turmeric (2g), lemon juice (30ml), salt (8g), garam masala (3g). Add chicken (600g), coat evenly. Marinate 4 hours.
  2. Heat oil (30ml) in grill pan over high heat (200°C).
  3. Add marinated chicken, cook 4-5 minutes per side until charred and cooked through. Set aside.
  4. Masala: Heat oil (40ml) in large pan over medium-high heat (190°C). Add onions (200g), cook 5 minutes until golden.
  5. Add ginger (15g) and garlic (12g), cook 1 minute until fragrant.
  6. Add tomatoes (300g), cook 5 minutes until broken down and oil separates.
  7. Add coriander powder (8g), turmeric (2g), red chili powder (4g), garam masala (5g), stir 1 minute.
  8. Add water (300ml), simmer 10 minutes over medium heat (160°C).
  9. Reduce to low (130°C). Add butter (50g) and cream (150ml), stir until smooth.
  10. Add grilled chicken tikka and juices, fold gently.
  11. Simmer 5 minutes over low heat. Add salt (10g).
  12. Gravy should be creamy, coating a spoon.
  13. Garnish with coriander leaves (20g). Serve hot with naan or rice.
