  1. First marinade: salt + lemon juice on chicken, 10 minutes at room temp
  2. Second marinade: yogurt + ginger-garlic + all spices, 2 hours at 4°C
  3. Heat oven to 200°C, pan-grill marinated chicken 3-4 minutes per side until 75°C internal
  4. Heat butter to 180°C, add cashew paste, cook 2 minutes
  5. Add tomato puree, cook 12 minutes on medium heat
  6. Add cooked chicken pieces
  7. Pour cream, add garam masala, simmer 8 minutes at 160°C
  8. Final visual: deep orange-red; Texture: tender chicken chunks in creamy gravy
