- First marinade: salt + lemon juice on chicken, 10 minutes at room temp
- Second marinade: yogurt + ginger-garlic + all spices, 2 hours at 4°C
- Heat oven to 200°C, pan-grill marinated chicken 3-4 minutes per side until 75°C internal
- Heat butter to 180°C, add cashew paste, cook 2 minutes
- Add tomato puree, cook 12 minutes on medium heat
- Add cooked chicken pieces
- Pour cream, add garam masala, simmer 8 minutes at 160°C
- Final visual: deep orange-red; Texture: tender chicken chunks in creamy gravy
