- Heat oil to 190°C in karahi (wok)
- Add cumin seeds, cook 20 seconds
- Add onions, stir-fry 4 minutes until translucent (170°C)
- Add chicken pieces, cook 8 minutes until sealed
- Add tomatoes, cook 5 minutes on high heat (190°C)
- Add ginger, green chiles, garam masala, chili powder
- Cook 8 minutes on medium heat (170°C) until chicken is 75°C internal
- Add capsicum, cook 2 minutes
- Add salt and coriander leaves
- Final cook 1 minute
- Visual: tender chunks in thick, chunky tomato sauce; Aroma: fresh ginger, green chiles
