  1. Heat oil to 190°C in karahi (wok)
  2. Add cumin seeds, cook 20 seconds
  3. Add onions, stir-fry 4 minutes until translucent (170°C)
  4. Add chicken pieces, cook 8 minutes until sealed
  5. Add tomatoes, cook 5 minutes on high heat (190°C)
  6. Add ginger, green chiles, garam masala, chili powder
  7. Cook 8 minutes on medium heat (170°C) until chicken is 75°C internal
  8. Add capsicum, cook 2 minutes
  9. Add salt and coriander leaves
  10. Final cook 1 minute
  11. Visual: tender chunks in thick, chunky tomato sauce; Aroma: fresh ginger, green chiles
