  1. Pressure cook soaked chickpeas with water, 10-12 whistles
  2. Heat oil to 180°C, add cumin seeds, cook 30 seconds
  3. Add onion, fry 4 minutes until golden (170°C)
  4. Add ginger-garlic paste, cook 2 minutes
  5. Add tomato puree, cook 8 minutes on medium heat
  6. Add cooked chickpeas with 100ml cooking liquid
  7. Add all spices, salt, and mango powder
  8. Simmer 10 minutes on low heat (150°C)
  9. Add green chiles, cook 2 minutes
  10. Visual: thick curry with whole chickpeas; Aroma: tangy spices from mango powder
  11. Garnish with coriander leaves
  12. Serve with bhature, rice, or bread
