- Pressure cook soaked chickpeas with water, 10-12 whistles
- Heat oil to 180°C, add cumin seeds, cook 30 seconds
- Add onion, fry 4 minutes until golden (170°C)
- Add ginger-garlic paste, cook 2 minutes
- Add tomato puree, cook 8 minutes on medium heat
- Add cooked chickpeas with 100ml cooking liquid
- Add all spices, salt, and mango powder
- Simmer 10 minutes on low heat (150°C)
- Add green chiles, cook 2 minutes
- Visual: thick curry with whole chickpeas; Aroma: tangy spices from mango powder
- Garnish with coriander leaves
- Serve with bhature, rice, or bread
