👩🍳 How to make Burfi
- Mix powdered milk with 50ml water to paste consistency
- Heat ghee to 160°C in heavy pan
- Add milk paste, stir constantly for 10 minutes on medium heat (170°C)
- Add condensed milk, stir well
- Cook 10 minutes on low heat (150°C), stirring constantly
- Mixture should thicken and leave pan sides
- Add cardamom powder, fold in nuts
- Pour onto greased tray
- Spread to 1.5cm thickness with wet spatula
- Cool to room temperature (30 minutes)
- Cut into squares while still warm
- Set 2 hours at room temperature
- Visual: smooth, fudgy texture
- Store in airtight container
