👩‍🍳 How to make Burfi

  1. Mix powdered milk with 50ml water to paste consistency
  2. Heat ghee to 160°C in heavy pan
  3. Add milk paste, stir constantly for 10 minutes on medium heat (170°C)
  4. Add condensed milk, stir well
  5. Cook 10 minutes on low heat (150°C), stirring constantly
  6. Mixture should thicken and leave pan sides
  7. Add cardamom powder, fold in nuts
  8. Pour onto greased tray
  9. Spread to 1.5cm thickness with wet spatula
  10. Cool to room temperature (30 minutes)
  11. Cut into squares while still warm
  12. Set 2 hours at room temperature
  13. Visual: smooth, fudgy texture
  14. Store in airtight container
