- Prepare filling (3 mins, room temp): Mix mashed potato with onion, green chilli, garam masala, chilli powder, coriander, salt.
- Prepare dough (2 mins, room temp): Mix besan, turmeric, salt, chilli powder, gradually add water to form "consistency like thick batter."
- Trim bread (2 mins, room temp): Trim crusts from bread slices if desired.
- Spread filling (2 mins, room temp): Spread 1-2 tbsp filling on one bread slice, cover with another bread slice, press gently.
- Cut diagonally (1 min, room temp): Cut sandwich diagonally into two triangles.
- Heat oil (3 mins, high heat): Heat oil in deep pan until medium-hot.
- Dip in batter (3 mins, room temp): Dip each bread triangle in besan batter, coat completely on all sides.
- Deep fry (2-3 mins, medium-high heat): Slide coated bread into hot oil, fry until golden brown on all sides (approximately 2-3 minutes).
- Flip and cook (1-2 mins, medium-high heat): Flip once or twice for even cooking until crispy and golden.
- Drain (1 min, room temp): Remove to paper towels, serve hot with green chutney.
