  1. Prepare ingredients (10 mins): Cube potatoes, chop onion, tomato, chilies, coriander—keep all ingredients at hand, ready for quick assembly.
  2. Add chutneys (2 mins): Pour mint chutney (¼ cup), tamarind chutney (¼ cup) over puffed rice mixture. Toss gently but thoroughly—all rice should have chutney coating.
