  1. Make dough (10 mins): Mix flour, baking powder, baking soda, sugar, salt. Add 1 tbsp oil, yogurt. Add water gradually, knead into soft, slightly sticky dough. Rest 2-3 hours covered (longer rest allows better puffing).
  2. Divide dough (5 mins): Divide into 8 portions. Oil hands, gently form into loose balls (don't compress—puffing requires loose dough). Rest 30 mins covered.
  3. Prepare oil (2 mins): Heat oil to 375°F (190°C) in deep pan. Test: small bread piece should rise immediately, sizzle vigorously.
  4. Fry bhatura (5 mins per piece, medium-high heat): Gently stretch one ball into thin 6-inch circle (don't roll—stretch gently). Carefully slide into hot oil. Within 1-2 secs, bhatura will puff dramatically. Fry 10-15 secs until light golden bottom, flip. Fry other side 10-15 secs until light golden throughout. Transfer to paper towels immediately.
  5. Serve: Serve piping hot with chole (chickpea curry), tamarind chutney, pickle.
