👩🍳 How to make Besan Ladoo
- Powder sugar (3 mins): Grind sugar with cardamom pods into fine powder (visual cue: completely powdered, no grains visible).
- Fry nuts (2 mins, medium heat): Heat 15g ghee, fry cashews until golden. Remove to bowl and set aside.
- Roast besan (5 mins, medium heat): Add roasted besan, roast for 5-6 minutes until color changes slightly and smells aromatic (visual cue: slight color change, nutty aroma develops).
- Deep roast (20 mins, low heat): Reduce to lowest heat, add remaining 85g ghee and stir constantly for approximately 20 minutes until deep golden color and highly aromatic (visual cue: kitchen fills with intense roasted aroma, besan turns light brown to golden, becomes very fragrant).
- Cool (5 mins): Remove from heat when aroma is strong and besan turns airy and fluffy. Stir for 2-3 minutes to cool slightly (visual cue: mixture appears fluffy and light).
- Mix sweetener (2 mins): Cool completely, then add powdered sugar and cashews. Knead together until combined (visual cue: mixture is dry yet holds together when pressed).
- Shape (3 mins): Roll into 16 balls (visual cue: smooth, firm balls approximately 30g each). Press gently in palms to firm without breaking.
