👩🍳 How to make Besan Laddu
- Roast besan (6 mins, medium heat): Heat ¼ cup ghee, add besan. Roast on medium-low heat 5-6 mins, stirring constantly—besan should be light golden, aromatic.
- Fry nuts (2 mins): Heat 2 tbsp ghee separately. Fry cashews, almonds until golden (1 min each), fry raisins until plump. Remove with spoon.
- Make laddus (10 mins): Cool roasted besan slightly. Add ½ cup powdered sugar, mix well. Fold in fried nuts, raisins, cardamom, salt. While warm, oil hands, roll 1 tbsp mixture into smooth ball. Work quickly—mixture hardens as it cools.
- Store: Airtight, lasts 1 week.
