  1. Mix dry ingredients (1 min, room temp): Combine besan, ajwain, turmeric, and salt in bowl.
  2. Add vegetables (1 min, room temp): Add ginger, tomatoes, onions, coriander, chilli.
  3. Add water gradually (2 mins, room temp): Pour water slowly while stirring to create "batter of thick but pourable consistency."
  4. Heat griddle (2 mins, high heat): Heat griddle or tawa, lightly grease with oil, reduce to medium heat.
  5. Pour batter (1 min, medium heat): Pour one ladle of batter in center, spread thin to 6-inch circle.
  6. Drizzle oil (1 min, medium heat): Drizzle ½-¾ tsp oil around edges and center.
  7. Flip (1 min, medium heat): Flip entire chilla carefully.
  8. Second side (2-3 mins, medium heat): Press gently with spatula, cook until brown spots appear throughout.
  9. Remove (1 min, room temp): Remove to plate, serve hot with green chutney.
