- Prepare peppers (5 mins): Wash peppers, remove seeds, cut into ½-inch thick rings. Pat completely dry with paper towels.
- Make batter (3 mins): Combine besan, rice flour, salt, ginger, ajwain, green chilies, coriander, spices. Add water gradually until thick, coating consistency.
- Coat peppers (5 mins): Dip each pepper ring into batter, coat both sides completely, shake off excess.
- Heat oil (1 min): Oil 350°F (175°C). Test with batter.
- Fry pakoras (10 mins, medium heat): Place coated pepper rings into oil (batches of 6-8). Fry 8-10 mins, turning gently every 2-3 mins. Rings should be golden, crispy, peppers tender. Transfer to paper towels.
- Garnish (1 min): Sprinkle chaat masala while warm.
