👩🍳 How to make Barfi
- Reduce milk (15 mins, medium heat): Pour milk into heavy pan. Bring to boil. Reduce heat to medium, let simmer uncovered 15 mins, stirring occasionally. Milk should reduce to about ¼ original volume (thick, creamy, light brown color).
- Add sugar (2 mins, medium heat): Add ½ cup sugar, stir until dissolved.
- Add ghee (10 mins, medium heat): Add 4 tbsp ghee, stir constantly for 8-10 mins. Mixture should turn darker, leave oil trail when spoon pulled through. Consistency should be thick, fudgy.
- Add dry ingredients (1 min): Add cardamom powder, saffron, milk powder (if using—helps thicken), salt. Mix well.
- Fold nuts (1 min): Fold in chopped cashews, almonds gently.
- Set (5 mins): Pour onto greased pan. Cool 15-20 mins. Cut into squares.
