👩‍🍳 How to make Barfi

  1. Heat ghee to 160°C in heavy-bottom pan
  2. Add khoya, stir constantly for 8 minutes at medium heat (170°C)
  3. Khoya should turn slightly darker, release fragrance
  4. Add sugar mixed with 100ml water
  5. Stir constantly for 12-15 minutes on medium heat (170°C)
  6. Mixture should thicken and leave pan sides
  7. Check consistency: drop in cold water, should form soft ball at 112°C
  8. Add cardamom powder, rose water
  9. Add nuts, fold in gently
  10. Pour onto greased tray, spread to 2cm thickness
  11. Cool to room temperature (30 minutes)
  12. Cut into squares (3cm x 3cm)
  13. Visual: smooth, fudgy texture; slightly glossy surface
  14. Store in airtight container
