👩🍳 How to make Barfi
- Heat ghee to 160°C in heavy-bottom pan
- Add khoya, stir constantly for 8 minutes at medium heat (170°C)
- Khoya should turn slightly darker, release fragrance
- Add sugar mixed with 100ml water
- Stir constantly for 12-15 minutes on medium heat (170°C)
- Mixture should thicken and leave pan sides
- Check consistency: drop in cold water, should form soft ball at 112°C
- Add cardamom powder, rose water
- Add nuts, fold in gently
- Pour onto greased tray, spread to 2cm thickness
- Cool to room temperature (30 minutes)
- Cut into squares (3cm x 3cm)
- Visual: smooth, fudgy texture; slightly glossy surface
- Store in airtight container
