👩‍🍳 How to make Barfi

  1. Grease an 8x8 inch (20x20 cm) baking pan with oil (10ml). Line with parchment paper if available.
  2. Heat ghee (80ml) in a heavy-bottomed pan over low heat (120°C).
  3. Add milk powder (150g) gradually, stirring constantly to avoid lumps.
  4. Continue cooking over low heat (120°C) for 5-6 minutes, stirring frequently, until milk powder turns light golden and fragrant.
  5. Reduce heat to very low (110°C). Add condensed milk (200ml) and sugar (100g), mixing thoroughly.
  6. Continue cooking, stirring constantly, for 8-10 minutes until the mixture becomes thick, sticky, and pulls away from the sides of the pan.
  7. Add crushed cardamom (3g), grated nutmeg (pinch), and chopped dry fruits (50g). Stir well.
  8. Cook for another 2 minutes, stirring constantly.
  9. Visual cue: When a spoon is pushed into the mixture, it should have resistance and not immediately close back up.
  10. Pour the hot mixture into the greased pan, spreading evenly using an oiled spatula or knife.
  11. Let cool for 15-20 minutes until firm enough to cut.
  12. Cut into 16 equal squares or diamond shapes using an oiled knife.
  13. Let cool completely before removing from pan.
  14. Store in an airtight container for up to 2 weeks.
