👩🍳 How to make Barfi
- Grease an 8x8 inch (20x20 cm) baking pan with oil (10ml). Line with parchment paper if available.
- Heat ghee (80ml) in a heavy-bottomed pan over low heat (120°C).
- Add milk powder (150g) gradually, stirring constantly to avoid lumps.
- Continue cooking over low heat (120°C) for 5-6 minutes, stirring frequently, until milk powder turns light golden and fragrant.
- Reduce heat to very low (110°C). Add condensed milk (200ml) and sugar (100g), mixing thoroughly.
- Continue cooking, stirring constantly, for 8-10 minutes until the mixture becomes thick, sticky, and pulls away from the sides of the pan.
- Add crushed cardamom (3g), grated nutmeg (pinch), and chopped dry fruits (50g). Stir well.
- Cook for another 2 minutes, stirring constantly.
- Visual cue: When a spoon is pushed into the mixture, it should have resistance and not immediately close back up.
- Pour the hot mixture into the greased pan, spreading evenly using an oiled spatula or knife.
- Let cool for 15-20 minutes until firm enough to cut.
- Cut into 16 equal squares or diamond shapes using an oiled knife.
- Let cool completely before removing from pan.
- Store in an airtight container for up to 2 weeks.
