👩🍳 How to make Baingan Bharta
- Preheat oven to 220°C
- Prick eggplants with fork
- Roast eggplants 25-30 minutes until skin chars and flesh softens (internal 85°C)
- Cool, peel off charred skin, mash pulp
- Heat oil to 180°C, add cumin seeds, cook 20 seconds
- Add onion, fry 4 minutes until golden (170°C)
- Add ginger-garlic, cook 2 minutes
- Add tomato puree, cook 5 minutes
- Add mashed eggplant pulp, all spices, salt
- Cook 12 minutes on low heat (150°C), stirring often
- Visual: thick, smoky eggplant paste; Aroma: charred eggplant
- Add green chiles in final 1 minute
- Garnish with coriander leaves
- Serve with rice or bread
