👩‍🍳 How to make Baingan Bharta

  1. Preheat oven to 220°C
  2. Prick eggplants with fork
  3. Roast eggplants 25-30 minutes until skin chars and flesh softens (internal 85°C)
  4. Cool, peel off charred skin, mash pulp
  5. Heat oil to 180°C, add cumin seeds, cook 20 seconds
  6. Add onion, fry 4 minutes until golden (170°C)
  7. Add ginger-garlic, cook 2 minutes
  8. Add tomato puree, cook 5 minutes
  9. Add mashed eggplant pulp, all spices, salt
  10. Cook 12 minutes on low heat (150°C), stirring often
  11. Visual: thick, smoky eggplant paste; Aroma: charred eggplant
  12. Add green chiles in final 1 minute
  13. Garnish with coriander leaves
  14. Serve with rice or bread
