👩🍳 How to make Badam Halwa
- Blanch almonds in hot water (70°C) for 2 minutes
- Peel skin, soak in cold water 15 minutes
- Dry thoroughly, roast at 180°C oven for 5 minutes
- Grind roasted almonds to fine powder
- Heat ghee to 160°C in pan
- Add almond powder, roast 8 minutes on medium heat (170°C)
- Stir constantly, almonds should turn slightly darker
- Make sugar syrup: boil water with sugar, cook to 104°C (thread consistency)
- Add hot syrup to roasted almonds, stir well
- Cook 10 minutes on low heat (150°C), stirring constantly
- Mixture should thicken, leave pan sides
- Add cardamom powder
- Pour onto greased tray (2cm thickness)
- Set 2 hours at room temperature
- Cut into squares, decorate with whole almonds
- Visual: fudgy, rich brown halwa
