👩‍🍳 How to make Badam Halwa

  1. Blanch almonds in hot water (70°C) for 2 minutes
  2. Peel skin, soak in cold water 15 minutes
  3. Dry thoroughly, roast at 180°C oven for 5 minutes
  4. Grind roasted almonds to fine powder
  5. Heat ghee to 160°C in pan
  6. Add almond powder, roast 8 minutes on medium heat (170°C)
  7. Stir constantly, almonds should turn slightly darker
  8. Make sugar syrup: boil water with sugar, cook to 104°C (thread consistency)
  9. Add hot syrup to roasted almonds, stir well
  10. Cook 10 minutes on low heat (150°C), stirring constantly
  11. Mixture should thicken, leave pan sides
  12. Add cardamom powder
  13. Pour onto greased tray (2cm thickness)
  14. Set 2 hours at room temperature
  15. Cut into squares, decorate with whole almonds
  16. Visual: fudgy, rich brown halwa
