  1. Make tikki mix (5 mins): Mix mashed potatoes, boiled peas, onion, green chilies, ginger, besan, rice flour, ajwain, salt. Mix gently—batter should hold together without being sticky.
  2. Shape tikkis (5 mins): Divide into 8 portions. Pat into ½-inch thick round patties (about 3 inches diameter). Place on plate.
  3. Fry tikkis (10 mins, medium-high heat): Heat 2 tbsp oil on tawa (griddle). Place 4 tikkis, fry 3 mins until golden and crispy bottom. Flip, fry 3 mins other side until crispy, cooked through. Repeat with remaining tikkis.
