  1. Boil potatoes (15 mins, high heat): Pressure cook potatoes whole 3 whistles, or boil 12-15 mins until just tender (not mushy). Cool, peel, cut into small cubes.
  2. Heat oil (1 min, medium heat): Add cumin seeds and ajwain, allow to splutter.
  3. Sauté base (2 mins, medium heat): Add onion, cook until golden.
  4. Add aromatics (1 min, medium heat): Add ginger, green chillies, sauté briefly.
  5. Add potatoes (2 mins, medium heat): Add potato cubes, cook while stirring occasionally.
  6. Add spices (1 min, medium heat): Add turmeric, chilli powder, garam masala, amchur, salt, mix well.
  7. Dry cook (3-4 mins, medium heat): Cook until potatoes are dry (no moisture) and edges become slightly crispy. Stir frequently.
  8. Finish (1 min, room temp): Remove from heat, add coriander leaves, toss gently.
