  1. Heat oil (1 min, medium heat): Add ajwain, allow to splutter and release aroma.
  2. Sauté base (2 mins, medium-low heat): Add onions, cook until softened (not brown).
  3. Add aromatics (1 min, medium heat): Add ginger, garlic, green chillies, sauté briefly.
  4. Add tomatoes (3 mins, medium heat): Add chopped tomatoes, sauté until pulpy.
  5. Add spices (1 min, medium heat): Add turmeric, asafoetida, chilli powder, mix well.
  6. Add potatoes and water (30 secs, medium heat): Add diced potatoes and 2 cups water, stir well.
  7. Pressure cook (3-4 whistles, medium heat): Pressure cook until potatoes are fork-tender.
  8. Mash some potatoes (2 mins, medium heat): After opening pressure cooker, mash some potatoes to thicken gravy naturally.
  9. Simmer briefly (2 mins, low heat): Simmer uncovered, finish with garam masala and amchur powder.
