- Make dough (10 mins): Mix flour, salt. Add 1 tbsp oil, rub breadcrumbs. Add water gradually, knead into soft dough. Rest 15 mins covered.
- Make filling (5 mins): Combine mashed potatoes, onion, green chilies, ginger, spices, mango powder, salt, coriander. Mix until uniform.
- Stuff parathas (10 mins): Divide dough into 6 balls. Roll one into thin circle (4-5 inches). Place 2 tbsp filling in center. Gather edges, pinch closed, reshape into ball. Roll gently into thin paratha (7-8 inches), maintaining filling distribution.
- Serve: Serve hot, tear apart if desired, serve with pickle, yogurt, or tea.
