👩‍🍳 How to make Aloo Gosht

  1. Heat oil to 190°C, add cumin seeds, cook 20 seconds
  2. Add onions, fry 6 minutes until deep golden (170°C)
  3. Add lamb pieces, cook 8 minutes on high heat until browned
  4. Add ginger-garlic paste, cook 3 minutes
  5. Add tomato puree, cook 5 minutes on medium heat
  6. Add chili, coriander, turmeric, salt, garam masala
  7. Pour water, bring to boil (95°C), reduce heat to low (150°C)
  8. Pressure cook 20 minutes on high pressure, or simmer 40 minutes
  9. Add potatoes, cook 15 more minutes until tender
  10. Check lamb is easily pierced with fork
  11. Visual: tender lamb with cooked potatoes in thick gravy; Aroma: warm meat spices
  12. Garnish with coriander leaves
