👩🍳 How to make Aloo Gosht
- Heat oil to 190°C, add cumin seeds, cook 20 seconds
- Add onions, fry 6 minutes until deep golden (170°C)
- Add lamb pieces, cook 8 minutes on high heat until browned
- Add ginger-garlic paste, cook 3 minutes
- Add tomato puree, cook 5 minutes on medium heat
- Add chili, coriander, turmeric, salt, garam masala
- Pour water, bring to boil (95°C), reduce heat to low (150°C)
- Pressure cook 20 minutes on high pressure, or simmer 40 minutes
- Add potatoes, cook 15 more minutes until tender
- Check lamb is easily pierced with fork
- Visual: tender lamb with cooked potatoes in thick gravy; Aroma: warm meat spices
- Garnish with coriander leaves
