- Cube potatoes (3 mins): Boil potatoes until tender (5-6 mins). Cool, peel, cube into ½-inch pieces. Set aside.
- Prepare vegetables (3 mins): Chop onion, tomato, chilies, coriander. Keep in separate containers.
- Layer vegetables (2 mins): Top potatoes with chopped vegetables (onion, tomato, green chili, coriander)—keep layered, not mixed.
- Add chutneys (2 mins): Drizzle mint chutney (1 tbsp per bowl), tamarind chutney (1 tbsp per bowl) evenly over vegetables.
