  1. Cube potatoes (3 mins): Boil potatoes until tender (5-6 mins). Cool, peel, cube into ½-inch pieces. Set aside.
  2. Prepare vegetables (3 mins): Chop onion, tomato, chilies, coriander. Keep in separate containers.
  3. Layer vegetables (2 mins): Top potatoes with chopped vegetables (onion, tomato, green chili, coriander)—keep layered, not mixed.
  4. Add chutneys (2 mins): Drizzle mint chutney (1 tbsp per bowl), tamarind chutney (1 tbsp per bowl) evenly over vegetables.
  5. Add yogurt (1 min): Spoon whisked yogurt (2 tbsp per bowl) over chutney.
  6. Top with garnishes (2 mins): Sprinkle sev (½ tbsp), pomegranate seeds (¼ tbsp), chaat masala (¼ tbsp), chili powder (small pinch), cumin powder (small pinch), coriander (sprinkle).
