👩‍🍳 How to make Vegetarian Biryani

  1. Soak rice 30 mins, parboil 8 mins in salt water
  2. Heat 20ml ghee, fry onion until golden (4 mins), remove half
  3. Add yogurt + ginger-garlic + chili, simmer 3 mins
  4. Add mixed vegetables (carrot, peas, beans), cook 5 mins
  5. Heat rice water, add to mixture (1 cup)
  6. Layer rice over vegetables, sprinkle remaining onions
  7. Add whole spices, top with 20ml ghee
  8. Cover with foil + tight lid
  9. Cook high 2 mins, then low 15 mins
  10. Rest 5 mins
  11. Fragrant vegetable biryani, vegetables tender
