👩🍳 How to make Vegetarian Biryani
- Soak rice 30 mins, parboil 8 mins in salt water
- Heat 20ml ghee, fry onion until golden (4 mins), remove half
- Add yogurt + ginger-garlic + chili, simmer 3 mins
- Add mixed vegetables (carrot, peas, beans), cook 5 mins
- Heat rice water, add to mixture (1 cup)
- Layer rice over vegetables, sprinkle remaining onions
- Add whole spices, top with 20ml ghee
- Cover with foil + tight lid
- Cook high 2 mins, then low 15 mins
- Rest 5 mins
- Fragrant vegetable biryani, vegetables tender
