  1. Cut vegetables into medium pieces
  2. Cook toor dal in 1 cup water until soft
  3. Heat oil, add mustard + fenugreek + curry leaves (crackling)
  4. Add red chili, fry 15 secs
  5. Add onion, fry until soft (2 mins)
  6. Add sambar powder, fry 2 mins (roasted aroma)
  7. Add drumstick + carrot + beans, sauté 3 mins
  8. Pour dal + water, add tamarind
  9. Simmer 10 mins until vegetables fork-tender
  10. Add tomato, simmer 2 mins
  11. Add salt, taste
  12. Serve with white rice or dosa
  13. Fragrant sambar, vegetables tender
