👩🍳 How to make Vegetable Sambar
- Cut vegetables into medium pieces
- Cook toor dal in 1 cup water until soft
- Heat oil, add mustard + fenugreek + curry leaves (crackling)
- Add red chili, fry 15 secs
- Add onion, fry until soft (2 mins)
- Add sambar powder, fry 2 mins (roasted aroma)
- Add drumstick + carrot + beans, sauté 3 mins
- Pour dal + water, add tamarind
- Simmer 10 mins until vegetables fork-tender
- Add tomato, simmer 2 mins
- Add salt, taste
- Serve with white rice or dosa
