👩‍🍳 How to make Vadai

  1. Soak urad dal 4 hours
  2. Grind to fluffy batter (15 mins), add very little water
  3. Add green chili + ginger + cumin + salt + pepper
  4. Whisk batter until fluffy + airy (2 mins with hand)
  5. Heat oil to 170°C
  6. Wet palm with water, press batter through hand into donut shape
  7. Slide into hot oil
  8. Fry 2 mins until golden
  9. Flip, fry 2 mins other side until dark golden
  10. Drain on paper
  11. Serve hot with chutney or sambar
