👩🍳 How to make Vadai
- Soak urad dal 4 hours
- Grind to fluffy batter (15 mins), add very little water
- Add green chili + ginger + cumin + salt + pepper
- Whisk batter until fluffy + airy (2 mins with hand)
- Heat oil to 170°C
- Wet palm with water, press batter through hand into donut shape
- Slide into hot oil
- Fry 2 mins until golden
- Flip, fry 2 mins other side until dark golden
- Drain on paper
- Serve hot with chutney or sambar
