- Cook toor dal soft with turmeric, reserve water
- Cut vegetables into medium chunks
- Heat oil, add mustard + asafetida (crackling 10 secs)
- Add curry leaves, fry 15 secs
- Add onion, fry until soft (2 mins)
- Add sambar powder, fry 2 mins (roasted aroma)
- Add pumpkin + carrot, sauté 3 mins
- Pour dal water + tamarind juice, simmer 8 mins
- Add cooked dal + tomato, simmer 2 mins
- Add salt, taste
- Pour sambar over white rice in bowl
- Serve hot - traditional sambar rice
