  1. Clean squid, cut into 1cm rings
  2. Heat oil, add ginger-garlic, fry 2 mins
  3. Add onion, fry until soft (2 mins)
  4. Add turmeric + chili, fry 1 min
  5. Add squid rings, cook 3 mins (slight color change)
  6. Add tamarind paste + coconut milk + curry leaves
  7. Simmer 8 mins until squid tender
  8. Add salt, taste
  9. Serve over white rice
  10. Tender squid, creamy-tangy sauce
