- Clean squid, cut into 1cm rings
- Heat oil, add ginger-garlic, fry 2 mins
- Add onion, fry until soft (2 mins)
- Add turmeric + chili, fry 1 min
- Add squid rings, cook 3 mins (slight color change)
- Add tamarind paste + coconut milk + curry leaves
- Simmer 8 mins until squid tender
- Add salt, taste
- Serve over white rice
