  1. Roast vermicelli in dry pan 3 mins until slightly browned
  2. Heat oil, add mustard + urad dal (crackling 10 secs)
  3. Add cashews, fry until golden (1.5 mins)
  4. Add ginger + green chili + curry leaves (30 secs)
  5. Add onion, fry until soft (2 mins)
  6. Add roasted vermicelli, toss 2 mins
  7. Pour water + salt, stir
  8. Cook 6 mins until water absorbed + vermicelli cooked
  9. Serve hot, nutty roasted aroma
