- Roast vermicelli in dry pan 3 mins until slightly browned
- Heat oil, add mustard + urad dal (crackling 10 secs)
- Add cashews, fry until golden (1.5 mins)
- Add ginger + green chili + curry leaves (30 secs)
- Add onion, fry until soft (2 mins)
- Add roasted vermicelli, toss 2 mins
- Pour water + salt, stir
- Cook 6 mins until water absorbed + vermicelli cooked
- Serve hot, nutty roasted aroma
