  1. Wash poha, drain
  2. Blanch sprouts 2 mins in boiling water, drain
  3. Heat oil, add mustard (crackling 10 secs)
  4. Add peanuts, fry until golden (2 mins)
  5. Add ginger + green chili + curry leaves (30 secs)
  6. Add poha + sprouts, toss gently (2 mins)
  7. Add salt, squeeze lemon
  8. Toss 1 min
  9. Serve immediately, crunchy + nutty
