  1. Mix semolina + curd + salt + baking soda
  2. Let rest 15 mins (swells)
  3. Add chili + ginger + curry leaves
  4. Heat oil, add mustard + urad dal (crackling)
  5. Pour tempering into batter, fold gently
  6. Fill greased idli molds 3/4 full
  7. Steam 8 mins (water boiling, medium heat)
  8. Cool 2 mins, remove
  9. Serve hot with sambar
