  2. Heat oil, add mustard (crackling 10 secs)
  3. Add ginger + green chili + curry leaves (30 secs)
  4. Add onion, fry until soft (2 mins)
  5. Add pumpkin + turmeric + salt
  6. Cover, cook 8 mins until pumpkin tender
  7. Add crushed jaggery (2 pieces)
  8. Fold gently, cook 1 min more
  9. Serve warm, sweet pumpkin + spice
