  1. Heat iron griddle to 160°C (medium)
  2. Pour thick batter circle (7 inches), don't spread
  3. Sprinkle vegetables, chili, curry leaves on top
  4. Cook 2 mins until bottom sets golden
  5. Flip carefully, cook 1 min other side
  6. Oil edges with 3g oil drops
  7. Cook until edges crisp, vegetables fragrant (total 3.5 mins)
  8. Serve with sambar + chutney
