- Cook toor dal soft, reserve water
- Cut vegetables into medium pieces
- Heat oil, add mustard + fenugreek + curry leaves (crackling)
- Add red chili, fry 15 secs
- Add pumpkin + drumstick + onion, sauté 3 mins
- Add sambar powder, fry 2 mins (roasted aroma)
- Pour dal water + tamarind juice, simmer 8 mins
- Add cooked dal, tomato, simmer 3 mins
- Add salt, taste
- Pour over steamed white rice
- Stir gently, serve hot
