  1. Cook toor dal soft, reserve water
  2. Cut vegetables into medium pieces
  3. Heat oil, add mustard + fenugreek + curry leaves (crackling)
  4. Add red chili, fry 15 secs
  5. Add pumpkin + drumstick + onion, sauté 3 mins
  6. Add sambar powder, fry 2 mins (roasted aroma)
  7. Pour dal water + tamarind juice, simmer 8 mins
  8. Add cooked dal, tomato, simmer 3 mins
  9. Add salt, taste
  10. Pour over steamed white rice
  11. Stir gently, serve hot
