- Extract tamarind juice in 1 cup water
- Grind cumin + pepper + fenugreek coarsely
- Heat oil, add mustard + curry leaves (crackling 10 secs)
- Add ginger-garlic, fry 1 min
- Add tamarind juice + tomato + salt
- Bring to boil, add red chili
- Simmer 8 mins (tangy aroma)
- Add ground spices, simmer 2 mins
- Pour over steamed white rice in bowl
