  1. Extract tamarind juice in 1 cup water
  2. Grind cumin + pepper + fenugreek coarsely
  3. Heat oil, add mustard + curry leaves (crackling 10 secs)
  4. Add ginger-garlic, fry 1 min
  5. Add tamarind juice + tomato + salt
  6. Bring to boil, add red chili
  7. Simmer 8 mins (tangy aroma)
  8. Add ground spices, simmer 2 mins
  9. Pour over steamed white rice in bowl
  10. Stir, serve hot
