- Soak rice + urad dal + fenugreek for 5 hours
- Grind to fine batter (45 mins), add salt, ferment 8 hours
- Heat iron griddle to 180°C (medium-high)
- Spread batter thin in 10 seconds, cook 1.5 mins until crispy
- Flip, cook 20 seconds until edges golden
- Tempering: heat oil, add mustard seeds + curry leaves (crackling sound)
- Pour over dosa, serve with chutney and sambar
