  1. Soak rice + urad dal + fenugreek for 5 hours
  2. Grind to fine batter (45 mins), add salt, ferment 8 hours
  3. Heat iron griddle to 180°C (medium-high)
  4. Spread batter thin in 10 seconds, cook 1.5 mins until crispy
  5. Flip, cook 20 seconds until edges golden
  6. Tempering: heat oil, add mustard seeds + curry leaves (crackling sound)
  7. Pour over dosa, serve with chutney and sambar
