  1. Clean + marinate prawns with turmeric + salt 10 mins
  2. Mix chili + cumin + ginger-garlic + lemon into paste
  3. Coat each prawn with spice paste
  4. Heat oil to 170°C
  5. Carefully slide prawn into hot oil
  6. Fry 2 mins per side until crispy golden
  7. Remove with slotted spoon, drain on paper
  8. Add vegetable side + sambar
  9. Serve hot thali with crispy fried prawns
