  1. Roast cashews in dry pan 2 mins, set aside
  2. Soak roasted cashews in warm water 5 mins
  3. Grind soaked cashews to fine paste
  4. Heat oil, add ginger-garlic, fry 2 mins
  5. Add onion, fry until soft (2 mins)
  6. Add turmeric + chili, fry 1 min
  7. Add cashew paste, fry 2 mins
  8. Pour coconut milk, stir well
  9. Add prawns, cook 5 mins until pink
  10. Add salt + lemon juice + mint
  11. Serve over white rice
