👩‍🍳 How to make Pondicherry Pongal

  1. Roast rice + moong dal separately (5 mins each) until nutty aroma
  2. Crush black pepper + cumin coarsely
  3. Heat oil, fry cashews golden (2 mins), add ginger slices
  4. Add curry leaves, fry 30 seconds
  5. Add roasted rice + dal, stir 2 mins
  6. Pour water + salt, bring to boil
  7. Reduce heat to low, cover, cook 15 mins until grains separate
  8. Fold in pepper-cumin mixture, serve with ghee
