👩‍🍳 How to make Pondicherry Dum Biryani

  1. Marinate chicken with yogurt + ginger-garlic + chili 30 mins
  2. Soak rice 30 mins, parboil in salt water 8 mins
  3. Heat 20ml ghee, fry onion slices until golden (4 mins), remove
  4. In same pot, add chicken marinade, cook 10 mins
  5. Heat rice water, add to chicken (1 cup)
  6. Layer: chicken mixture -> parboiled rice -> fried onions
  7. Top with 20ml ghee, bay leaf, whole spices
  8. Cover with foil + tight lid
  9. Cook on high 2 mins (steam whistle), then low heat 15 mins
  10. Rest 5 mins covered
  11. Serve with mint
