  1. Wash poha briefly under running water, drain
  2. Heat oil, add mustard seeds (crackling 10 secs)
  3. Add cashews + peanuts, fry until golden (2 mins)
  4. Add ginger + green chili + curry leaves (30 secs)
  5. Add poha, toss gently to coat oil (2 mins)
  6. Add salt, toss again
  7. Squeeze lemon juice, mix quickly
  8. Serve immediately, crispy + nutty
