- Mix maida + salt + 15ml oil
- Slowly add warm water, knead into soft smooth dough (10 mins)
- Cover, rest 30 mins at 35°C
- Divide into 3 balls
- Roll each into 8-inch disk
- Brush with oil + ghee mixture
- Starting from one edge, roll tightly into spiral
- Coil the spiral
- Flatten gently into 6-inch disk
- Heat iron plate to 180°C, cook parotta 2 mins per side until golden
