  1. Heat paniyaram pan (multi-hole mold) to 160°C
  2. Oil each hole generously
  3. Mix batter + onion + chili + ginger + curry leaves + salt + coconut
  4. Fill each hole 3/4 full
  5. Cook 2 mins until bottom sets
  6. Rotate with stick, cook other sides (total 4 mins)
  7. All sides golden brown
  8. Remove with stick carefully
  9. Serve hot with chutney
