  1. Add salt + ginger + chili + curry leaves to dosa batter
  2. Mix well
  3. Fill greased idli molds 3/4 full
  4. Steam 10 mins (boiling water, medium heat)
  5. Cool 2 mins, remove from molds
  6. Serve hot with sambar + chutney
  7. No separate oil tempering needed
  8. Fluffy + light, spice integrated into batter
