👩🍳 How to make Muttai Dum Biryani
- Boil eggs 8 mins, shell, halve
- Cube potatoes, deep fry until golden
- Soak rice 30 mins, parboil 8 mins
- Heat 20ml ghee, fry onion until golden (4 mins), remove
- Add yogurt + ginger-garlic + chili, simmer 5 mins
- Add eggs + fried potatoes, cook 3 mins
- Heat rice water, add to mixture (1 cup)
- Layer rice over, sprinkle fried onions + spices
- Top with 20ml ghee, cover with foil + lid
- Cook high 2 mins, then low 15 mins
- Rest 5 mins
- Served biryani, eggs tender, rice fragrant
