👩‍🍳 How to make Muttai Dum Biryani

  1. Boil eggs 8 mins, shell, halve
  2. Cube potatoes, deep fry until golden
  3. Soak rice 30 mins, parboil 8 mins
  4. Heat 20ml ghee, fry onion until golden (4 mins), remove
  5. Add yogurt + ginger-garlic + chili, simmer 5 mins
  6. Add eggs + fried potatoes, cook 3 mins
  7. Heat rice water, add to mixture (1 cup)
  8. Layer rice over, sprinkle fried onions + spices
  9. Top with 20ml ghee, cover with foil + lid
  10. Cook high 2 mins, then low 15 mins
  11. Rest 5 mins
  12. Served biryani, eggs tender, rice fragrant
