👩‍🍳 How to make Medu Vada

  1. Soak urad dal + rice 4 hours
  2. Grind to fluffy batter (not watery), 15 mins grinding
  3. Add salt + pepper + cumin + ginger + chili + curry leaves
  4. Whisk batter 2 mins with hand until fluffy
  5. Heat oil to 170°C
  6. Wet palm with water, press batter through hand into donut shape
  7. Slide into hot oil
  8. Fry 2 mins until golden, flip
  9. Fry 2 mins other side until dark golden
