👩🍳 How to make Medu Vada
- Soak urad dal + rice 4 hours
- Grind to fluffy batter (not watery), 15 mins grinding
- Add salt + pepper + cumin + ginger + chili + curry leaves
- Whisk batter 2 mins with hand until fluffy
- Heat oil to 170°C
- Wet palm with water, press batter through hand into donut shape
- Slide into hot oil
- Fry 2 mins until golden, flip
- Fry 2 mins other side until dark golden
