👩🍳 How to make Masala Dosa
- Boil + peel potato, dice into 5mm cubes
- Heat 15ml oil, add mustard + urad dal (crackling)
- Add curry leaves + ginger + green chili (30 secs)
- Add potato + onion + turmeric, cook 3 mins until onion soft
- Add salt, keep warm
- Heat iron griddle to 180°C
- Spread dosa batter thin
- Cook 1.5 mins until bottom golden
- Add 15ml oil to edges
- Add potato filling in center, fold into tube shape
- Cook 30 secs more, serve hot
