- Clean fish, make 3 diagonal cuts on each side
- Grind coconut + green chili + ginger + garlic + onion to coarse paste
- Mix paste with turmeric + chili + salt + tamarind
- Rub paste inside + outside fish, rest 10 mins
- Soak banana leaf in warm water (softens)
- Place fish on banana leaf
- Wrap tightly, tie with string if needed
- Heat oil in iron skillet
- Place wrapped fish in skillet
- Cover with lid, cook 12 mins on medium heat
- Carefully unwrap, transfer to plate
