  1. Clean fish, make 3 diagonal cuts on each side
  2. Grind coconut + green chili + ginger + garlic + onion to coarse paste
  3. Mix paste with turmeric + chili + salt + tamarind
  4. Rub paste inside + outside fish, rest 10 mins
  5. Soak banana leaf in warm water (softens)
  6. Place fish on banana leaf
  7. Wrap tightly, tie with string if needed
  8. Heat oil in iron skillet
  9. Place wrapped fish in skillet
  10. Cover with lid, cook 12 mins on medium heat
  11. Carefully unwrap, transfer to plate
  12. Tender fish in aromatic paste, wrapped flavors
