- Clean fish, make diagonal cuts
- Mix turmeric + chili + cumin + ginger-garlic + lemon + salt into paste
- Coat fish inside + outside with paste
- Rest 10 mins
- Heat oil to 170°C
- Carefully slide fish into hot oil
- Fry 3 mins on each side until scales crispy + flesh cooked white
- Remove, drain on paper
- Arrange fish on plate with white rice
- Add vegetable curry + sambar
