  1. Clean fish, make diagonal cuts
  2. Mix turmeric + chili + cumin + ginger-garlic + lemon + salt into paste
  3. Coat fish inside + outside with paste
  4. Rest 10 mins
  5. Heat oil to 170°C
  6. Carefully slide fish into hot oil
  7. Fry 3 mins on each side until scales crispy + flesh cooked white
  8. Remove, drain on paper
  9. Arrange fish on plate with white rice
  10. Add vegetable curry + sambar
  11. Serve hot crispy fish thali
